This is a very special lot that was produced at Los Pirineos by the late Gilberto Baraona.
Gilberto, a fourth-generation coffee farmer was a widely renowned coffee producer in El Salvador and a pioneer of the industry. In June 2020 he sadly passed away, which would make this his last harvest. His son Diego and daughter Fabiola, have now taken over the farm to carry on Gilberto’s legacy.
The picturesque Los Pirineos, named after the geographically similar Pyrenees mountains in Europe, is situated on a stand-alone volcano and enjoys a highly unique, possibly irreplicable microclimate.
The farm’s drying beds used for natural and honey processing are situated between two mountain peaks which allows for a continuous zephyr to pass through. This breeze, coupled with up to 12 hours of sunlight per day provides for a gentle and evenly controlled fermentation.
This microlot bourbon varietal has undergone a yellow honey process which has resulted in a well-balanced, full-flavoured and silky smooth cup. We were fortunate to secure a single bag late last year and are stoked to be able to now share it with you.
