This beautiful microlot of Pink Bourbon was grown by Luis Anibal Calderón on his Finca Villa Betulia in Huila, Colombia.
The rare Pink Bourbon varietal is a spontaneous and natural variation of the Red and Yellow Bourbons, scarcely seen and only actively cultivated by a handful of farmers in Colombia. Don Luis has carefully isolated and contained this lot to preserve it’s unique flavour characteristics and benefit from it’s inherent resistance to leaf rust.
It was hand-picked and hand-floated to remove any defective cherries before undergoing a 15 hour dry fermentation. It was then carefully depulped leaving bean mucilage then dried on raised beds for 20 days before a second hand-sorting selected only the best cherries for milling.
The term 'honey' actually comes from how sticky the beans get during this way of processing. In many ways, this type of coffee is halfway between a washed coffee and a natural process coffee, it’s fruity, but not in as exaggerated a way as some naturals and often has a more rounded acidity than washed coffees, with a honeyed sweetness and complex mouth feel.
We've tailored a light roast profile to highlight it’s orange blossom florals, a silky raspberry body and a long sweet milk chocolate finish.
